It is certainly the most "noble" among the rice on the market and is characterized by a long and hard grain.
It contains a large amount of amylose (over 24% ss) it's a rice that stays firm when cooked with a large absorption of condiments and it is perfect for slow cooking recipes.
Use: Risotti, Salads.
